Makes 4 Servings


 

Ingredients:

2 pounds ground beef (80% lean)

1 tsp pepper

1/2 tsp salt

8 slices cheddar cheese

1 red bell pepper, chopped

1 tsp olive oil

iceberg lettuce

4 brioche buns


Instructions:

    1. Combine ground beef, salt, and pepper, mixing lightly but thoroughly. Lightly shape into eight ½-inch thick patties.
    2. Place patties in center of grid over medium, ash-covered coals. Grill, covered, 8 to 10 minutes (over medium heat on preheated gas grill, 7 to 9 minutes) until instant-read thermometer inserted horizontally into center registers 160°F, turning occasionally. Place a cheddar cheese slice on each patty to melt just before taking them off the grill.
    3. Saute chopped red bell pepper with olive oil in a small pan. 
    4. Place two burger patties on bottom of each bun; top evenly with red bell pepper and iceberg lettuce. Enjoy!

4 oz. crumbled blue cheese

4 brioche buns
