Shopping List: Beef shoulder petite tender, lemon pepper, fresh chopped parsley, olive oil, mushrooms, shallots or onions, brandy, whipping cream and Worchestershire sauce.

Feature Cut of the Month: The Petite Tender
What is a Petite Tender?
The new Petite Tender makes an impression on any plate. Serve whole as a small roast or slice into elegant medallions. It has size and shape comparable to a pork tenderloin. One of the most tender cuts available, the Petite Tender also provides great beef flavor and a juicy bite. The Petite Tender comes from the Shoulder.

Preparation and Cooking Time:
Can be served as a whole roast or sliced into small medallions. Cook to 145ºF for medium rare doneness or 160ºF for medium doneness using meat thermometer.

Storage:
This steak can be stored in the refrigerator for about 3 to 4 days and in the freezer for 6 to 12 months.

Beef On A Budget
As the cost of living increases, more and more people are trying to make the best of their money when they go to the grocery store! Consumers have three budgets they consider when buying beef:

Visit the Gourmet Garden at 2008 Kentucky State Fair
August 14-24 in South Wing Lobby A
Kentucky's Beef producers are once again the proud sponsors of the Gourmet Garden at the Kentucky State Fair this year! Gourmet Garden showcases daily beef demonstrations and entertainment events featuring culinary professionals from 10AM to 7PM. New this year is the Texas Roadhouse Roadshow that will feature beef 101 demonstrations! Also there will be a Cast Iron Chef contest and a Cookoff Contest. Come out and enjoy the fun and support Kentucky's Beef Producers!

Kids In The Kitchen Activities include:

MyPyramid Bingo – Bingo with a nutritional twist.  Students will fill their carts by answering nutritional questions
Finding Nutrient-Rich Foods – Students will learn about nutrition facts, food labeling, food with key nutrients that are good or excellent sources of nutrients
Mixed Dish Mysteries – Students will combine foods from different food groups to make a delicious dish
Portion Control – Students will learn the meaning of serving size, how to identify serving size information on nutrition labels
Calorie Salary – Kids go shopping in a mock grocery store with calories instead of money to learn how to choose a well balanced diet
Cooking Time – Kids pull it all together to prepare a well-balanced meal – MyPyramid Pizza

"Discover the Power of Protein in the Land of Lean Beef"

Protein equals satisfaction. According to a 2007 Journal of Nutrition study, protein provides more satiety than carbohydrates and fat. Eating a moderately high-protein diet can curb hunger and the body's desire to eat. Protein even helps you maintain weight while you are asleep! Animal Proteins like lean beef are complete high-quality proteins that contain all the essential amino acids, or "building blocks," the body needs to grow, build, and maintain muscle mass.  It is recommended that  a person eat at least four ounces of a high-quality protein at each meal to help maintain muscle mass, and provide energy to lead an active lifestyle.

Tips on how to get lean with protein:  Based on 2005 Dietary Guidelines for Americans and MyPyramid.

  • Wake-up Call: start the day with scrambled eggs in a whole grain pita with vegetables and order a nonfat latte to add a protein boost to your caffeine fix.

  • Maximized Mid-Day Munchies: Pack beef jerky for a protein-powered treat, add low fat cheese to apple slices, or snack on cottage cheese for a complete protein pick-me-up.

  • Lean Lunches: Add more protein to any salad with a hardboiled egg or lean beef, or enjoy an open faced lean roast beef sandwich.

  • Satisfying Suppers: Add lean ground beef to chili or other soups to spick up the protein power. Don't forget sliced lean steak in your stir-fry for more protein sizzle.
